Ginger Beer

3  large ginger roots 
1 1/2limes, juiced
Sugar  to taste
2 tbs vanilla esssence
3-4 cups water
1.  Grate ginger and soak for 15-20 minutes.
2.  Strain.
3.  To the remaining liquid add water, sugar, lime, and vanilla essence.
4.  Bring to taste!
