1 pkg. deveined, deboned smoked
herring
1 creole hot pepper to your taste
1/2 green pepper
1 small sprig parsley
3 Tbs. tomato paste
3 Tbs. oil |
1 lb. rice
1/2 red pepper to your taste
1 celery stalk
1 small piece of thyme
1 1/2 cup of water |
Soak herring over night and then break into small pieces.
In the oil, sauté the onion, parsley, hot pepper, celery, and chopped
peppers. Then add the herring chunks and cook for a few minutes.
Add herring water and tomato paste. Let simmer. Add rice. Season
to taste. Let boil until all water is evaporated and the rice grain is
soft (but not too soft). |
