2 - 3 lbs tamarinds
1 1/2 half lbs sugar- white or
brown |
2 sticks cinnamon, broken in
pieces
peel from 1 small orange, broken
up |
Peel the green tamarind, cut along the back,
and put in water to soak overnight. Remove the seeds and put in a
pot. Add sugar, cinnamon and orange peel. Stir, and then put on a
medium fire & cook until the mixture changes color and the syrup is
a little thick. Remove from fire and serve when cool. |
