Stew Mutton/Beef

2 lbs mutton or beef 
4 large carrot, chopped (optional)
3-4 cups of water 
2 stalks of celery
2 sprigs of parsley
2-3 tbs.  tomato paste or 1 can 
      tomato sauce
Small amount cooking oil
1 lb white potatoes, peeled and 
     chopped (optional)
1 onion
1 red or green pepper, chopped
4-5  cloves of garlic,
sprig of thyme
Clean and cut meat into small pieces and season.  Put small amount of cooking oil in an iron pot and heat.  And meat to the pot and cover, stirring  occasionally.  Add seasonings - peppers,  onions, celery, garlic and thyme.  Add water and cover,  stirring  occasionally.  Let boil until the meant is tender.  Add carrots and potatoes, tomato paste or sauce.  Boil until vegetables are tender.  Season to your taste.  Serve with rice, spaghetti  or macaroni and cheese.
